Amaranth is a group of more than 60 species of plants, some of which are cultivated as pseudo-cereals—seeds used like grains. It has been grown for thousands of years and was a staple crop of the Aztecs. Today, it’s appreciated worldwide for its nutritional value and gluten-free properties.
